Observed several food containers to be uncovered, including: (1) several containers holding glaze food ingredients located under the metal prep table in the middle section of the establishment, (2) several bags containing sugar and cooking base located along the wall next to the box freezer in the middle section of the establishment, and (3) additional glaze and sugar based products located in the True Refrigerator--all these food items were observed to be uncovered during times of inactivity. Observed an improper food dispensing utensil within a container storing glaze within the Traulsen cooler--it had no handles. Provide suitable dispensing utensils to be used by employees/consumers--preferably ones with handles so that hand-touched surfaces do not come into contact with the food item. 750.280 Next Inspection
17  Observed no chlorine test strip found on-site. Provide for a test kit or other device that accurately measures the parts per million concentration of the sanitizer solution to be available. 750.750 Next Inspection
22  Observed the dough mixer located next to the oven to be unclean. Clean daily (wash and sanitize) and maintain. 750.800. Next Inspection
23  Observed the interior of the lower cabinets of the baked goods display case in the front section of the store to be unclean and cluttered. In addition, the exterior of the food ingredient containers located under the metal prep table (where the dough is made and shaped) and on the grey storage shelf directly next to the metal prep table is observed to be unclean. Also, the gray shelf and the metal prep-table was observed to be unclean. Finally, the exterior of the Traulsen cooler, water heating unit, exterior pipes of the 3-compartment sink was observed to be unclean. Clean, organize, and maintain these surfaces. 750.800. 32  Observed no toilet paper in the employee restroom. Provide for all hand sinks to have supply of soap and paper towels to assure that proper hand washing occurs. 750.1120 Observed used toilet paper in the trash can. The employees were not flushing the used toilet paper; instead, they were throwing them in the trash can within the restroom facility, which created a foul odor within the restroom. Provide for all vestibules and/or toilet facilities to be kept clean and in good repair and free from objectionable odors. 750.1110 Next Inspection
36  Observed the floor under the coffee dispensing station to be unclean. In addition, the floor within the Michael Wenz oven is observed to be unclean. Furthermore, the floor surrounding the water heater, the Traulsen cooler and the 3-compartment sink is unclean. Provide for all flooring areas to be in a clean condition . 750.1220 Next Inspection
